With Summer well on its way, it is a great time to get out and grill up some of these 18 Over The Top Burger Recipes! I find that cooking outdoors makes everything taste better.  

Dusting off the grill and getting out into the sun to grill up some of these out of bounds burgers, what could be better?  I will sometimes even get out my cast iron griddle to cook my burgers on my gas grill. Don’t get me wrong I love that char-grilled flavor but I also love the way the high heat on a flat top griddle makes the burger taste. I love that crispy crust!

There is something for everyone here in this round-up. From your traditional beef burgers, to a wonderful salmon burger.  From over the top Greek flavors of lamb with feta to some great poultry burgers too. How about a vegan veggie burger that’s bursting with yumminess!?

How to make a good burger

Who doesn’t love a burger with all the trimmings? Young and old alike will find something here to enjoy! My daughter rarely eats fast food burgers.

They are just something that she doesn’t enjoy, but she always eats one of my homemade burgers. Something about the taste of a great homemade burger puts it a few notches above the everyday!

You can cook the burgers any way you want, rare, medium rare, well done. You can add just about anything you can imagine to your burger.

From the old standbys, cheese, bacon, BBQ sauce, and mushrooms. To non-traditional flavors, like caramelized onions, or even a fried egg!

Don’t forget one important thing!

When you are making your burgers it is important to keep in mind that you have enough fat in your patty to ensure it doesn’t dry out when it is cooking.

It can be a fatal mistake to go through all the trouble of creating your burger only to find that it is not as juicy and moist as you hoped.

A good general rule of thumb when using ground beef is the 80 – 20 rule. Your meat patties should have 80 percent meat and 20 percent fat. This will allow your patty to remain moist and juicy.

This general rule can be applied to other types of meat also. Pork and sausage meat usually contain a good amount of fat so you likely don’t need to worry too much about bumping up the fat content in these proteins.

Healthy Fats

Turkey and chicken on the other hand can be a little trickier. The fat content in these meats is usually lower. You are going to need to add an additional fat to the meat or you will definitely end up with an overly dry burger patty. 

You may have picked these meats perhaps as a healthier, lower fat option over other meats. Adding fat may seem counter-intuitive but adding a healthy fat will keep your burger moist and juicy.

Try adding a good quality olive oil or avocado oil; this will help make your burger nice and juicy while retaining that healthy aspect you might be looking for in your burger.

Burgers are a grilling staple! They are usually simple and quick to pull together. The ingredients are generally easy to pick up at the store and they are so versatile. 

You can use whatever you have on hand and make beef patties, lamb burgers, chicken or turkey burgers or maybe a salmon burger.

Those little extras

The ingredients may change but the great taste of a burger cooked on the grill will never change! You can simply use a little salt and pepper for seasoning or make it as spicy as you like.

Mix up your buns, maybe a sesame seed or onion bun. Hey, maybe try a brioche bun. Try toasting your bun and add a little butter or mayo for extra flavor!

When it comes to your condiments, try something new – a special sauce, some salsa, tartar sauce, spicy mustard or tzatziki. You can take it south of the border with some grilled or pickled jalapenos.

When you get creative with your burgers the sky is literally the limit. I love a homemade refrigerator pickle on top or on the side of a burger too.
