How do you grill the perfect steak?

Great question! Knowing how to grill the perfect steak is so important. After all, you can spend a lot of money on a great cut of meat and can be disappointed if it is not cooked properly. The first thing you need to do is to make sure that you take your steak out of the refrigerator well before you cook it as it needs to be at room temperature. I like to bring it out of the refrigerator at least 30 minutes prior. 

Next is seasoning, you have to season your steak. Seasonings can range from just salt and pepper to marinades or seasoning salts; they all add great flavor to your steak.

It doesn’t matter if you are using charcoal or gas you must make sure that your grill is pre-heated before you put your steak on. Make sure that the temp of your grill is medium hot, at a minimum. You want to make sure that you sear the steak so that the juices are sealed in, plus you want to make sure you get some great dark grill marks! 

When the steaks are half done cooking on one side I like to move them 45 degrees on the grill. This will give you those beautiful criss-cross grill marks, just like at the steak house. When you flip the steaks, do the same on the other side.

How long do you keep a steak on the grill?

Another really great question and the answer is…that depends. Everyone likes their steak cooked to a different level of doneness. Some people like their steaks rare, some like it cooked to medium, some people like them cooked well done. So your steak will stay on the grill as long as it needs to, depending upon how you or your guest want your steak cooked.

The internal temperature for a rare steak should be about 130 degrees F, for medium-rare it is 135 degrees F. For medium it should be 140 degrees F, and for medium-well, the internal temperature should be 150 degrees F. I like to use a Themoworks Thermapen to get an instant-read on the internal temperature of the steaks, that way everyone gets the steak they ordered!

Remember that once you take the steak off the grill it needs to rest for at least 5 minutes. During this rest time, it will continue to cook so make sure you take your steak off the grill right at the desired internal temperature or it will be overdone when you serve it.

Different Cuts of Meat

It is good to become familiar with the different cuts of meat you can get. You should also try to get to know your local butcher; they will often be able to assist you with your steak selection. I love to try a variety of different steak cuts, from bone-in cuts like a porterhouse or T-bone to sirloin strips to flank steaks.

One cut of meat that we simply do not get here in our part of Canada is a skirt steak. I have asked and asked. All the skirt steaks produced here are shipped to Japan, they can get a much better price for that cut of meat. It’s a shame really; there is some fantastic skirt steak recipe out there!
