22 Fantastic Grilled Vegetables

Here is a great collection of 22 Fantastic Grilled Vegetable Recipes. Whoever said that vegetables are boring has never tried these amazing recipes for the grill for a perfect side dish for the summer months! This collection of grilled vegetable recipes will have something for everyone. They all would pair great with chicken, beef, or anything else that you might have on your menu!

You don’t need much in the way of equipment to create a wonderful grilled veggie.  A grill pan, wire basket, or a BBQ wok all work well. If you don’t have any of these items you can simply put your veggies directly on the grill. Medium-high heat usually works best, salt and pepper to taste, mix in some olive oil, and away you go!

You can also make your own grill basket with aluminum foil to cook with or wrap the veggies in, like when you make grilled corn. You can put your veggies and meats, like shrimp, using skewers and serve them up as a kabob.

Which vegetables are good for grilling?

There is a grilling recipe for just about any vegetable from artichokes to zucchini!! Seriously, if you can cook a vegetable you can grill a vegetable, and I think they taste the best off the grill. You can roast vegetables on the grill or in the oven.

Start by mixing your oil, herbs, spices, or even balsamic vinegar in a small bowl. Turn on your grill to medium-high, and coat your veggies in the oil and herbs or spices, make sure you season with salt and pepper. 

Grill your veggies until they are tender and lightly charred. If you are grilling firm vegetables like eggplant you can slice them in 1/2 inch discs and grill them directly on the grill for 5-10 minutes per side. I like to brush them with an oil and herb mixture as they cook. They are done when you have nice grill marks on both sides.

Should I Marinate vegetables before grilling?

Should you marinate your veggies before grilling? Why not! Marinade will add more flavor to your grilled veggies. You don’t have to marinate them for very long; usually an hour or less is all that they need. 

Grilled veggies make the perfect side dish and can be cooked and ready to be served in 20 minutes or less! You can even make them in advance and serve them at room temperature. They are so versatile you can even serve the grilled veggies in a sandwich, the flavors are amazing!
