I don’t think there is anything better than serving your family and friends an amazing platter of goodness! The great thing about these is that you can prepare them in advance and keep them in the refrigerator until you are ready to serve them. Toss them on a preheated grill, and in under 10 minutes, you have a platter of bacon-wrapped pineapple bites for everyone!

What do You need to make Bacon Wrapped Pineapple bites?

This delectable recipe only contains 4 ingredients and is so simple to pull together. You are going to want to make this for every social event.

INGREDIENTS

  • Bacon – I use hickory smoked bacon, I find it adds a lovely flavor. Make sure you use good quality bacon or it will fall off the pineapple chunks when you grill it.
  • Fresh Ripe Pineapple – A fresh ripe pineapple is optimal, but you could use canned pineapple in a pinch.
  • Brown Sugar – Pairs beautifully with the bacon and the pineapple.
  • Cayenne pepper – For a hint of spicy heat, you can use just a pinch or a little more; it’s up to you.

How to make Bacon Wrapped pineapple bites

The process of making these delicious treats is very simple.

Start by mixing the brown sugar and cayenne pepper in a small bowl and set it aside. You can use as much or as little cayenne pepper as you like. The brown sugar does help to reduce the heat of the cayenne pepper, but use only what you feel comfortable with.

Lay a piece of parchment paper on a large baking sheet. Cut each strip of bacon in half and lay the pieces down on the parchment paper. You may need 2 baking sheets, depending on their size.

Generously sprinkle the brown sugar mixture over one side of the bacon. Place a piece of pineapple on the bacon strip and wrap the bacon around the pineapple. Secure the bacon and pineapple with a toothpick. Repeat with the remaining bacon strips.

You can prepare these ahead of time and keep them covered in the refrigerator until you are ready to serve them.

When you are ready to serve, preheat your grill to medium.

Place the bacon pineapple bites on the hot grill and grill for 2 – 3 minutes. Flip them over and grill on the second side for about 2 minutes. Turn them again, and try to get all the bacon on the grill to make it crispy.

Continue to turn the bites until the bacon is cooked to the desired doneness. Be careful not to walk away from the grill while these are cooking. Fat from the bacon will cause flareups, so you need to move them around the grill quite often.

Once they are done, remove them from the grill. Allow them to cool on a paper towel-lined plate or a wire cooling rack.

Serve them warm, just a note. You may want to make a double batch. They are going to disappear quickly!

Pro Tip

  • These are best eaten the day they are made, although you can reheat them in an air fryer. This will help keep the bacon crispy.
  • One whole medium pineapple is about the right size for 1 pound of bacon.
  • The toothpicks will burn slightly when you are cooking; don’t worry, that is normal.
  • Place one bite on the grill to start; if it sticks, turn the heat up on your grill, or you can grease the grill grates with oil before you start.

Ingredients
 

  • 1 pound Bacon each slice cut in half
  • 1 ripe fresh pineapple cut into 1.5-inch chunks
  • 1 cup brown sugar
  • 1-3 teaspoons cayenne pepper Depending on how much heat you want
  • Toothpicks

Instructions
 

  • Cut each bacon strip in half. Lay the bacon down on a parchment-covered baking sheet, not overlapping. Use 2 if you need to.
  • Mix the brown sugar and cayenne pepper together in a bowl till nicely combined.
  • Generously sprinkle the brown sugar mixture over the bacon (just the one side).
  • Place a piece of pineapple in the middle of one of the pieces of bacon on top of the brown sugar mixture and wrap the bacon around the pineapple.
  • Stick a toothpick through end of the bacon and pineapple, securing the bacon in place.
  • Preheat the grill over a medium heat for 15 minutes.
  • Place the bacon pineapple bites on the hot grill. Grill for about 2-3 minutes, and then flip over and grill a second side for about 2 minutes. Flip once more, trying to get another side of bacon face-down, and grill another minute.
  • Continue flipping till the bacon is cooked to your desired crispiness. Mine took about 5-6 minutes.
  • Remove from the grill to paper towel line plates or a wire cooling rack over a baking sheet.
  • Wait 1 or 2 minutes for them to cool down and serve warm.
