HOW TO MAKE BBQ rice
Start by soaking the rice in a large bowl of water for 10 minutes. Drain the rice and set it aside. Heat a heavy frypan or skillet with a lid over medium heat on your grill or side burner.
Add the olive oil, onions, jalapeno, and bell pepper and cook for 3-4 minutes, stirring occasionally. Then make a well in the center of the pan and add the butter, allowing it to melt. Once melted, add the rice and let sizzle for about 3-4 minutes. Stir to combine and saute for 8 minutes.
Add the garlic, chili powder, pepper, and Kosher salt and stir to combine. Cook for about 2 minutes, then add the BBQ sauce, stir and cook for 3 minutes.
Mix the chicken broth, water, and liquid smoke in a measuring cup and pour over the rice. Increase the heat and cook uncovered until it starts to boil.
Once it starts to boil, add the green onions, stir and cover the pan. Reduce the heat and allow to simmer for about 15 minutes. After 15 minutes, stir the rice and cover again for another 3 minutes, then turn off the heat. Keep the pan on the grill or side burner covered for about 10 more minutes or until all the moisture is absorbed.
Remove the lid and fluff the rice. Garnish with additional green onions and cilantro if desired. This easy side dish is the perfect accompaniment to anything you are grilling, from pork to beef to chicken.
