WHAT IS GRILLED CHICKEN SOUVLAKI?

Souvlaki is a popular fast food in Greece. It is marinated meat using chicken, pork, or lamb on a skewer, then cooked over an open flame or grill. The marinade and the grill together make the meat wonderfully flavorful. It’s a taste that is difficult to match.

What do you need to make grilled Chicken souvlaki?

Simple ingredients make all the difference. Plus, the marinade puts these chicken souvlaki skewers over the top with flavor.

Ingredients.

Ingredients

  • Chicken Breast – 2 boneless & skinless chicken breasts are what you will need.
  • Kosher salt – Kosher salt is a staple in my kitchen.
  • Fresh ground pepper – Use fresh ground pepper over pre-ground pepper if you can, the flavor is better.
  • Garlic, minced – I use fresh garlic cloves over jarred garlic, but the jarred garlic is fine if you don’t have fresh cloves.
  • Oregano – Dried oregano works great in this recipe; it is the go-to Mediterranean herb.
  • Lemon juice – Use fresh lemon juice if you can, but you can substitute bottled lemon juice.
  • Dijon mustard – Adds a nice sharp tang to the chicken.
  • Plain Greek yogurt – This is a must-ingredient for your chicken souvlaki; don’t use regular plain yogurt.
  • Extra virgin olive oil – Use a good quality olive oil; it makes a difference to the taste of the dish.

How to make grilled chicken souvlaki

To prepare the marinade, in a medium bowl, mix the Kosher salt, fresh ground pepper, minced garlic, oregano, lemon juice, Dijon mustard, and plain Greek yogurt. Stir until well combined.

Dice the chicken breasts into cubes approximately 1 inch in size and add them to the marinade. Stirring to ensure all the chicken is well-coated with the marinade. Cover the bowl with plastic wrap and refrigerate for 60 minutes.

If you are using wooden skewers, you need to make sure you soak them in water for 30 – 60 minutes while the chicken marinates before grilling. This will help to keep the wood from burning on the grill. If you are using metal skewers, you are good to go.

Preheat your grill to medium hot, about 375 degrees F., while you prepare the chicken for the grill.

Thread 4-5 chicken cubes on each of the skewers. Don’t pack the chicken pieces too tightly; they should be touching but not squished together. Discard the marinade.

Once your grill is preheated, place the skewers on the grill to cook. Turn the skewers occasionally to ensure even cooking of the chicken. It will take about 15 – 20 minutes for them to cook through.

Remove the skewers from the grill to a platter or plate and allow to rest for 5 minutes before serving.

Garnish with a lemon wedge and serve over rice, accompanied by fresh pita and tzatziki sauce. Enjoy this grilled chicken souvlaki with a lovely Greek Salad to complete your meal.

Ingredients
 

  • 1 1/2 lbs. chicken breast boneless and skinless (about 2 medium size breasts)
  • 1 tsp Kosher salt
  • 1/2 tsp fresh ground pepper
  • 3 garlic cloves minced
  • 1 Tbsp dried oregano
  • 1 1/2 Tbsp lemon juice
  • 1 Tbsp Dijon mustard
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp extra virgin olive oil

Instructions
 

  • Prepare the marinade. In a medium bowl, mix together the Kosher salt, fresh ground pepper, minced garlic, oregano, lemon juice, Dijon mustard, and Greek yogurt. Stir until well combined.
  • Dice the chicken breasts in cubes approximately 1 inch in size and add them to the marinade, stirring to make sure all the chicken is well coated with the marinade. Cover the bowl with plastic wrap and refrigerate for 60 minutes.
  • If using wooden skewers, soak them in water while the chicken is marinating.
  • Preheat your grill to medium hot, about 375 degrees F. Thread 4-5 chicken cubes on each of the skewers. Discard the marinade.
  • When the grill is heated, place the skewers on the grill and cook, turning occasionally, for 15 – 20 minutes or until they are cooked through.
  • Remove the skewers from the grill and allow to rest for 5 minutes before serving.
  • Garnish with a lemon wedge and serve over rice with fresh pita and tzatziki sauce. ENJOY!!
