WHAT IS IN GRILLED Harissa Chicken Thighs?
The marinade really makes this chicken recipe. Although you can use this same recipe when serving chicken breast or even chicken wings. I do love to use bone-in thighs, the dark meat is so juicy and flavourful.
INGREDIENTS
- Chicken thighs
- Sea salt
- Fresh ground pepper
- Harissa paste
- Lemon juice
- Honey
- Garlic, minced
- Olive oil
While the harissa paste is the secret ingredient and makes a difference in the recipe, the other ingredients are complementary to the harissa. Combined together, they make the chicken the star!
HOW TO MAKE gRILLED hARISSA CHICKEN THIGHS
Start by whisking the sea salt, fresh ground pepper, harissa paste, lemon juice, honey, minced garlic, and olive oil in a large bowl or baking dish. Place the chicken thighs in the bowl or baking dish and pour the marinade over top.
Gently stir to coat the chicken all over with the marinade. Cover with plastic wrap and refrigerate for at least 30 minutes. You can let the chicken thigh marinade for up to a few hours.
Preheat your grill to medium hot, about 350 – 375 degrees F. Remove the chicken from the marinade and discard. Cook on the grill for 10-12 minutes a side, turning occasionally.
You want the chicken thighs to cook to an internal temperature of 165 degrees F. I check the temperature with Thermoworks Thermapen instant-read thermometer; it works great every time!!

Once your chicken thighs are cooked, remove them from the grill to a platter and allow them to rest for a few minutes before serving.

Grilled Harissa Chicken Thighs
Ingredients
- 6 chicken thighs boneless, skin on (medium size thighs)
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
- ¼ cup harissa paste 2.25 oz | 64 g
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 1 teaspoon extra virgin olive oil
Instructions
- In a bowl, mix chicken, salt, pepper, harissa paste, lemon juice, honey, garlic, and oil.
- Marinade chicken thighs for at least 30 minutes or up to 2 hours.
- Preheat your grill to medium (350 – 375 degrees F).
- Remove the chicken thighs from the marinade and place them on the grill, discarding the marinade.
- Grill the chicken thighs for about 10 minutes per side. You want the internal temperature of the chicken to be at least 165 degrees F.
- Remove to a serving platter and let rest for a few minutes.
- Serve with salad, garlic bread, fries, or baked potato.
