This Grilled Pork Burger recipe is perfect when you are looking to change up your burger routine! Is there anything better than burgers cooked on the grill? I say no! If you are looking to swap out your beef for pork, this is the recipe. Serve these up, and no one will be asking, “Where’s the beef?”!

Making your burgers at home is a great way to save some money. Plus, you can make the burgers any way you like! This grilled pork burger recipe gives you the basics, but you can customize the ingredients to suit everyone.

Best of all, homemade burgers taste infinitely better than burgers from some fast food restaurant!

WHAT IS IN A Grilled pork burger?

Ingredients to make grilled pork burgers on a marble countertop.

All the usual suspects are here to make this great pork burger. The big difference is that you only use ground pork, not ground beef or a mixture of proteins for the patties.

INGREDIENTS

Burgers:

  • Ground pork – You should look for an 80:20 ratio of pork to fat. If it is too lean, your burgers will be dry.
  • Worcestershire sauce – This adds a depth of flavor to your burger.
  • Dijon mustard – It has a great flavor with a touch of spice and is perfect for your pork burger.
  • Granulated garlic – A little garlic flavor goes with everything, including burgers.
  • Onion powder – Helps bring out the flavor of the pork in the burger.
  • Kosher salt – I always use Kosher or sea salt in my cooking.
  • Fresh ground pepper – Fresh ground pepper tastes much better than preground pepper every time!
  • Brioche hamburger buns – The brioche buns have a great buttery flavor, but you can use regular hamburger buns if you can’t find brioche buns.
  • Butter – Please don’t use margarine or a butter substitute; real butter makes all the difference.

Suggested Toppings:

  • Havarti cheese slices – I like havarti cheese with my pork burgers, but you can use cheddar or American cheese, too.
  • Ketchup – Is a staple on all my burgers.
  • Mustard – Regular yellow-prepared mustard is a great choice.
  • Mayonnaise – For a smooth, creamy flavor.
  • Pickles, sliced – Pickles are a must on my burger, I like dill pickles but sweet pickles are a good alternative too!
  • Red onion, sliced – These have a sweet flavor that white or yellow onions don’t have.

How to make this grilled pork burger

in a large bowl, combine the ground pork, Worcestershire sauce, Dijon mustard, granulated garlic, onion powder, Kosher salt, and fresh ground pepper. Using your hands, gently mix the pork mixture until all the ingredients are just combined.

Divide the meat into 4 equal-sized portions and roll them into balls. Each ball should be about the size of a baseball.

Press each ball flat in your hands until they are about 4 1/2 inches in diameter. Lay the patties on a plate. Then, make a large indentation approximately 2 inches wide in the center of each patty. This helps the patties keep their flat shape when you are grilling them.

Cover the plate with plastic wrap and refrigerate for a minimum of 30 minutes. This helps to ensure that the burgers grill evenly and will help them hold together while you are grilling them.

Preheat your grill to medium heat. Place the patties on the preheated grill. Season with additional Kosher salt and fresh ground pepper if you like, and close the lid.

Allow the burgers to cook on the first side for 5 – 6 minutes undisturbed before moving or turning them. The patties should have nice grill marks on the first side. Flip the patties and close the lid, allowing the burgers to cook for an additional 5 – 6 minutes on the second side.

While the burgers are cooking, slice and butter your brioche buns. Just before the burgers are done, place a slice of havarti cheese on the top of each patty. Next, place the buttered brioche buns butter-side down on the grill to toast them.

Serve the grilled pork burgers on the toasted brioche buns with your choice of favorite toppings! You can have everyone build their own burger. That way, everyone gets exactly what they like!

Pro Tips:

  • When mixing the ground pork, be careful not to overmix. If you do, your burgers will be tough and chewy; mix the ingredients together until just combined.
  • You can place a small ice cube in the center of your pork patties when you put them on the grill. This will help to ensure that the patties stay flat as they cook.

Ingredients
 

Pork Burger:

  • 1 lb ground pork
  • 2 tsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 1/2 tsp granulated garlic
  • 1/2 tsp onion powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp fresh ground pepper
  • 4 Brioche hamburger buns
  • Butter softened, for spreading on the buns
  • Additional Kosher salt and fresh ground pepper to taste

Suggested Topping:

  • 4 slices Havarti cheese
  • Ketchup
  • Mayonnaise
  • Sliced pickles
  • Lettuce leaves
  • Slices of red onion

Instructions
 

  • In a large bowl, combine the ground pork, Worcestershire sauce, Dijon mustard, granulated garlic, onion powder, Kosher salt, and fresh ground pepper.
  • Using your hands, gently mix the pork mixture until all ingredients are just combined. Be careful not to overmix the pork.
  • Divide the meat into 4 equal portions and roll each into a ball. They should be about the size of a baseball.
  • Press the balls flat in your hands until they are about 4 1/2 inches in diameter. Place on a plate or platter. Make a 2-inch-wide indentation in the center of each patty. This will help the patties keep their shape when you are grilling them.
  • Cover with plastic wrap and refrigerate for 30 minutes. This will help ensure that the burgers grill evenly and hold together while cooking.
  • Preheat your grill to medium hot, about 350 – 375 degrees F.
  • Season the top of the patties with an additional sprinkle of Kosher salt and fresh ground pepper if you like.
  • Place the patties on the preheated grill and close the lid. Allow to cook on the first side for 5-6 minutes undisturbed. The patties should have nice grill marks on the first side.
  • Flip the patties over and grill on the second side for 5-6 minutes.
  • Meanwhile, butter the Brioche buns.
  • Place a slice of Havarti cheese on each of the pork patties, and put the buns on the grill to toast during the last minute of grilling.
  • Serve the pork burgers on the toasted buns, garnished with the suggested toppings or whatever toppings you prefer.
