I used to make these tasty little grilled medallions all the time. One day my wife asked me why I don’t ever make those grilled sweet potatoes anymore. So I decided to make them again and let you in on this great recipe.

- Brown sugar

HOW TO MAKE Grilled Sweet Potatoes
Start by preheating your grill to 350 degrees F. Wash the outside of the sweet potato and cut the ends off and discard. No need for peeling them. Slice the sweet potato into medallions approximately 3/8 of an inch thick.
In a microwave-safe bowl, combine the butter, brown sugar, and cinnamon. Microwave in 15-20 second increments until the butter is melted. Stir between each heating, making sure that the brown sugar and cinnamon are well mixed.
Place the sweet potato medallions on the preheated grill and brush the tops with the butter mixture. Turn the medallions over and brush the other side.
Cook for 4-6 minutes, then turn the sweet potatoes over and cook the other side. You want nice dark grill marks on both sides of the sweet potato. You also want the sweet potato to be nice and tender.
Brush any remaining butter mixture on the sweet potatoes before you remove them from the grill.
Serving your Grilled Sweet Potatoes
These sweet potatoes are best served warm right off the grill. The great thing about this recipe is that it is very quick to prepare. From start to finish, it takes 15 minutes or less.

Ingredients

- 2 ½ Tbsp of brown sugar
- ½ tsp cinnamon
Instructions
- Preheat your grill to medium heat, about 350 degrees F.
- Wash the outside of the sweet potato. No need to peel.
- Cut the ends off and then slice the sweet potato into medallions approximately 3/8 of an inch in thickness.
- In a microwave-safe bowl, combine the butter, brown sugar, and cinnamon.
- Microwave in 15-20 second increments until the butter is melted. Stir between each heating to make sure the brown sugar and cinnamon are well mixed.
- Place the sweet potato medallions on the preheated grill and brush the tops with the butter mixture.
- Turn the medallions over and brush the top side of the medallions. Allow the sweet potato discs to grill for 4-6 minutes on this side.
- When they are softened and have nice grill marks turn them over and grill the other side, for approximately 4-6 minutes.
- Brush any remaining butter mixture on the sweet potatoes before removing them from the grill.
- Serve warm off the grill.
