Suppose you love desserts as much as we do, you need to make this amazingly easy grilled Strawberry Peach Cobbler! You can make this with fresh summer fruit, but you can also use frozen fruit, making this a year-round recipe option!

Fruit cobbler is a dessert staple in our house. Making it on the grill adds a special flavor element you can’t get when you cook it in the oven.

Do Strawberries and peaches go together?

Short answer, yes! There is something special about the taste of a strawberry and the juicy, sweet flavor of a peach. Together, they combine to produce a special dessert that is absolutely delicious!

WHAT DO YOU NEED TO MAKE GRILLED strawberry peach cobbler?

I love to make a cobbler; it is quick and easy to prepare, and the taste is amazing! Simple ingredients make for a simply wonderful dessert!

What is a Cobbler?

Cobbler can be described as a fruit pie of sorts, but there is a difference. Yes, it contains fruit and tastes great, but it’s not a pie.

Pies are made with pastry, cobblers are made with a crumble. With pies, the pastry is on the bottom and the top of the fruit. With a cobbler, the crumble is only on the top, covering the fruit. This makes the cobbler a little lighter as the fruit-to-crust (or crumble) ratio is much higher!

INGREDIENTS

Fruit:

  • Peaches, peeled and sliced
  • Strawberries, sliced

Syrup:

  • Fresh lemon Juice
  • Water
  • Cornstarch
  • Brown sugar
  • Lemon zest
  • Vanilla extract
  • Kosher salt

Crumble:

  • Rolled oats
  • Brown sugar
  • Flour
  • Butter, melted

HOW TO MAKE GRILLED Strawberry Peach Cobbler

Preheat your grill to 350 degrees F. Set the grill up to cook the cobbler using the indirect cooking method. Only have heat under one side of the grill. You want the other side of the grill to have no direct heat under the grates.

To prepare the cobbler, start by placing the sliced strawberries and peaches into the bottom of a cast iron skillet and set it aside.

In a small bowl, whisk together the lemon juice, water, and cornstarch. Pour the mixture into a small saucepan and add the brown sugar and lemon zest to the saucepan.

Heat the lemon brown sugar mixture in the saucepan over medium heat, whisking to combine. Bring the syrup to a boil, making sure that the brown sugar is completely dissolved. Remove the syrup from the heat and pour over the strawberries and peaches in the skillet.

To make the crumble, stir together the oats, brown sugar, flour, and melted butter in a medium mixing bowl. You want the mixture to be combined but crumbly.

Sprinkle the oats mixture evenly over the top of the fruit and syrup in the skillet. Place the cast iron skillet on the side of the grill with no direct heat and close the lid.

Allow the cobbler to cook for 30 – 35 minutes. Then, increase the heat to about 425 degrees F. for an additional 10 minutes. This will allow the crumble on the top to become nice and crisp.

Once the top is nice and crispy, remove the skillet from the grill and allow it to rest for 15 – 20 minutes before serving. This not only will allow it to cool but will let the juices thicken.

Serving it up!

You can serve the cobbler on its own, which is spectacular, but you can add some extras when you serve it if you like. A scoop of vanilla ice cream is always a great choice, or if you prefer, a little whipped cream to top it off.

Any way you choose to serve it, I know you, your family, and your friends are going to love this over-the-top grilled dessert!

Pro Tips:

  • I always try to use freshly squeezed lemon juice in my recipes, but you can use bottled lemon juice if you need to in a pinch.
  • For enhanced flavor, you can cook this in your smoker if your smoker heats to 425 degrees F. (some smokers don’t heat to that temperature).
  • You can use frozen sliced strawberries and peaches, although you may need to add a little more cornstarch, as the frozen fruits contain more water than fresh fruits.

Ingredients
 

Fruit:

  • 3 ½ cups peaches peeled and sliced (about 4 peaches)
  • 1 ½ cups sliced strawberries

Syrup:

  • 1 tablespoon lemon juice
  • 3 tablespoons water
  • 1 tablespoon cornstarch
  • ¼ cup brown sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of Kosher salt

Crumble:

  • 1 cup rolled oats
  • 2/3 cup brown sugar
  • 3/4 cup flour
  • 1/2 cup butter melted

Instructions
 

  • Preheat your grill to 350 degrees F. Set it up to cook using the indirect method. You only want heat under one side of the grill, leaving no heat under the other side of the grill.
  • Combine sliced peaches and strawberries in the bottom of a cast iron skillet and set aside.
  • In a small bowl, whisk together the lemon juice, water, and cornstarch. Add the lemon juice mixture, brown sugar, lemon zest, vanilla extract, and kosher salt to a small saucepan. Whisk together over medium heat till the sugar dissolves and the syrup is about to boil. Immediately remove the pan from heat and pour over the fruit in the skillet. (if you let the syrup boil it will thicken too much)
  • In a medium mixing bowl, whisk together the oats, brown sugar, flour, and melted butter till crumbly and combined.
  • Sprinkle the crumble evenly over the top of the fruit and syrup. Place on non-heated side of the preheated grill and close the lid. Allow to cook with the lid closed for 30 minutes. Increase the heat to 425 and continue cooking for an additional 10 minutes, or until the crumble is nice and crisp on top.
  • Remove from grill and let sit for at least 15-20 minutes before serving.
  • Serve warm with ice cream or whipped cream if desired.
