HOW TO MAKE Chipotle Crema
Start by removing the seeds from the chipotle peppers. I find it too spicy if I leave those in. Add the peppers to a food processor or blender along with some of the adobo sauce. Be careful with the sauce; you can always add more spice, but it is difficult to take it away.
Then add the plain Greek yogurt (or sour cream if you are subbing that in for the yogurt), the lime juice, minced garlic, and Kosher salt.
Pulse the mixture until it is super creamy and smooth. Taste and adjust the seasonings, adding more salt, adobo sauce, or lime juice as needed. Remove the crema from the food processor or blender. Serve immediately or store in an air-tight container in the refrigerator for up to 5 days.
